Vis á Vis te brinda para este Shabat la receta judía para preparar un exquisito Falafel. Sus ingredientes perfectos resaltan el sabor.

Ingredientes
  • Ponga 2 tazas de garbanzos secos
  • 1 cucharadita de semillas de comino entero
  • 1 cucharadita de semillas de cilantro entero
  • Coloque 1 diente de ajo picados
  • 1 cebolla amarilla pequeña, pelada y picada en trozos
  • Agregue 1 taza de hojas de cilantro fresco empacado
  • 1 taza de hojas de perejil fresco empacado
  • Cáscara de 1 limón
  • ¼ de cucharadita de pimienta
  • 1 ½ cucharaditas de sal kosher, y más para sazonar después de cocinar
  • ½ cucharadita de pimienta negro
  • Aceite de semilla de uva para freír
Procedimiento
  • Coloca los garbanzos en un recipiente grande y llenarlo con agua para cubrirlos a una profundidad de 3 pulgadas. Cubra el recipiente con papel plástico y dejar en el mostrador durante 24 horas. Los garbanzos se triplicarán en tamaño y absorben un poco de agua a fin de comprobar un par de veces durante el remojo para ver si es necesario agregar más agua. Una vez que los granos han empapado durante 24 horas, escurrir y enjuagar muy bien.
  • Coloque el comino y semillas de cilantro en una sartén de hierro fundido de 8 pulgadas y establecer a fuego medio alto. Cocine, moviendo la sartén con frecuencia, hasta que las semillas emiten un aroma y justo empiezan a dorarse, de 3 a 4 minutos. Transferir las especias tostadas a un molinillo de especias y procese hasta que finamente molido. Ponga a un lado.
  • Coloca los garbanzos escurridos, especias molidas, ajo, cebolla, cilantro, perejil y en un tazón grande para mezclar. Revuelva para combinar luego a través de la máquina de picar carne en pequeñas cantidades hasta que todo ha sido molido.
  • Mezclar la ralladura de limón, pimienta, sal y pimienta negra en los garbanzos de tierra, luego rodar una pequeña cantidad de la mezcla en una bola del tamaño de una pequeña nuez o la empanada con las manos. La mezcla debe mantenerse unida muy bien y no desmoronarse.

  • Ponga una sartén grande, de bordes altos a una profundidad de 2.3 pulgadas, suficiente para cubrir el falafel en el aceite y calentar a fuego medio-alto.
  • Mientras que el aceite se calienta agarre una bolsa de papel aplanado sobre una bandeja de horno y cubrir con algunas toallas de papel limpias. Esto ayudará a recoger el aceite, ya que drena fuera de su falafel.
  • El aceite debe burbujear y chisporrotear a su alrededor. Deben permanecer juntos en una sola pieza y no romper nada. Se debe tomar 2 – 3 minutos para freír a un hermoso color dorado. Si su falafel no se sumerge por completo tápelo y cocine del otro lado hasta que sea agradable y dore por todos lados. Retire el falafel cocinado del aceite y escurra en papel.
