Receta judía para Shabat: Maude de papa

Vis á Vis te brinda para este Shabat una comida tradicional sefaradí: El Maude. Un plato que se puede prepara con carne o pollo y lleva también papas y condimentos. Con estos ingredientes es posible hacer una comida muy especial para servir en Shabat o en las fiestas judías.

Rinde de 14 a 16 porciones.

Ingredientes: Maude

4 huesitos de rodilla de ternera.
500 g. de chambarete de res.
8 cucharadas de aceite de maíz.
2 tazas de agua.
3 kg. de papas rojas, peladas, picadas en cubos medianos de 2 cms aproximadamente y fritas hasta que se doren bien.
Sal, al gusto.
2 cucharadas de pimienta árabe.
2 cucharaditas de consomé de pollo en polvo.
1 cucharadita de azúcar.
6 tazas de caldo de carne colado.
25 kipes chicos, ligeramente fritos.

Preparación:

En una olla exprés, se cuecen los tuétanos y la rodilla con suficiente agua durante 30 minutos, se enjuagan y se reservan. En la misma olla, se sofríe el chambarete en 4 cucharadas de aceite, se agrega el caldo de los tuétanos y la rodilla, y más agua de ser necesario para la cocción. Se deja cocer durante 40 minutos o hasta que la carne quede suave. Se cuela el caldo, se enjuaga la carne y se reservan.

En un tazón, se mezclan las papas con sal, la mitad de la pimienta, la mitad del consomé en polvo, el azúcar y 4 cucharadas de aceite. Se reservan.

En una olla extendida, se acomodan la carne y los kipes, y se sazona con sal, el resto de la pimienta y del consomé en polvo. Se agrega el caldo de carne colado y se cocina durante 20 minutos: después, se agrega la mezcla de papas reservada y se deja durante 20 minutos más. Se sirve en un platón extendido.
